Thai Iced Tea
(makes 4 to 6 glassas)

Thai Iced Tea is a really refreshing drink and the perfect compliment to the rest of your meal. Don't be afraid to alter the proportions to suit your tastes. Also I encourage you to add a straw, mint sprig, slice of lemon etc.

**Any exotic ingredients are MUCH less expensive at an asian market**

Ingredients for 4 glasses of Thai tea:

8 generous tablespoons of Thai tea leaves (I use the Pantai Norasingh brand)
6 cups of water
12 Tablespoons of sugar
1/2 cup of half & half (2 tablespoons per glass of tea)


1. Start by putting the tea and water into a pot over medium to high flame. Stir the mixture to make sure that the tea leaves soak into the water. Let it boil for 5 minutes stirring occasionally.

2. Turn off the stove and strain the mixture to remove the leaves.

3. Add sugar to strained tea and stir it until it dissolves.

4. Let the mixture cool to room temperature or store it in your refrigerator.

5. When you are ready to serve fill a glass ¾ full of ice. Next pour the tea mixture to about the same level as the cubes. Finally, right before drinking, stir in 2 tablespoons of half & half.
